The Best Ramen in Brooklyn
Ramen shops across Brooklyn, ranked and handed straight to you — vote it into whatever order you think is right, because the argument is the point. Scope is the ramen-ya: the bowl is the main event, not one section of a menu beside the sushi. An izakaya bar alongside is fine; a sushi restaurant with a decent tonkotsu on page three is not. Outposts of Japanese houses count, and each names its Brooklyn address. The order is an editorial call, not a computation — it weighs how far each broth sits from everything else nearby. It does not claim the linked pages settle it. Every entry carries a fact you can check on the business's own site, plus the bowl to order by its menu name. One honest limit: an entry needs a page of its own that opens. Bay Ridge's shops post to Instagram only, Flatbush's is reachable only through a delivery platform, and Sunset Park's site refuses every visitor. What's left is north and west Brooklyn — nothing below Greenwood, nothing east of Bushwick. Pizza has its own list.

Karazishi Botan
Foo Kanegae ran the ramen program at Ippudo before opening this Smith Street diner, and his own site calls the place a New York-style ramen diner rather than a Japanese restaurant. The bowls are numbered like case files. Get the Pan-Head — tonkotsu and miso together, chashu, menma, scallion, a knob of ginger paste on the side.

AFURI Brooklyn
Tokyo's AFURI landed at 61 North 11th Street in Williamsburg, and the brand's own locations page files the room alongside Portland, Toronto and two in Hong Kong. Skip the tonkotsu reflex here — the yuzu shio ramen is the signature, a clear chicken broth cut with enough citrus to feel almost fizzy. Light enough that you'll want a second.

Samurai Papa
Vegan diners get two full bowls here, not an afterthought — a Vegan Ramen and a Vegan Tomato Ramen sit on the same menu as the pork. The one to order is the Tonbara Ramen, whose broth is built from pork belly instead of bones, so it lands cloudy and sweeter than a standard tonkotsu. Bed-Stuy, two small bars, about a dozen seats.

ICHIRAN Brooklyn
Solo eating raised to a system: you mark a paper form, a curtain lifts, a bowl arrives, the curtain drops. The Bushwick room at 374 Johnson Avenue is one of three American branches this Fukuoka company runs, and its own site lists only Brooklyn, Midtown and Times Square. Order the Classic Tonkotsu Ramen and dial the richness, garlic and spice yourself.

Tonchin Brooklyn
Started in Tokyo in 1992, this kitchen makes its own noodles and says so plainly on its own menu, which is the sort of claim that shows up in the bowl. The Williamsburg room sits at 109 North 3rd Street, with siblings in Midtown, Los Angeles and Mexico City. Get the Original Tsukemen — chilled whole-wheat noodles, a hot tonkotsu dipping broth, lemon and sesame.

Kogane Ramen
Only two rooms carry this name, both listed on its own locations page: 76 Henry Street in Brooklyn Heights, and West 14th Street in Manhattan. That is the whole company. The Miso Lobster Ramen is the outlier worth ordering — shellfish sweetness laid over a miso base, which is not a combination many kitchens around here attempt.

Unoriginal Noodles
Malcolm Ting cooked at Altro Paradiso, Mercer Kitchen and The Meat Hook before taking over the old Lot 2 space on Sixth Avenue, and the room still feels more bar than noodle counter. Park Slope Pulse voted it top two for ramen in the neighbourhood in 2026. The Seafood Ramen is the one — saffron yuzu broth, roasted salmon, yu choy, menma.

Wanpaku
Cambodian flavours running through a Japanese izakaya is the setup, and the kitchen says exactly that on its own front page. Greenpoint, 621 Manhattan Avenue, with a cocktail list kept separate from the food menu. Order the Spicy Chicken Tan Tan Ramen, which leans on sesame and chilli rather than pork fat, and put the fried chicken beside it.

Enerugi Ramen
Sixteen hours of simmering goes into the Pai Tan Ramen, per the kitchen's own account of its Hakata-style broth, and it arrives thick enough to coat the noodles properly. Two rooms, both in Brooklyn — Greenpoint at 1020 Manhattan Avenue and Cobble Hill on Atlantic Avenue. Vegetarians get a shoyu bowl rather than an apology.

Toyo Ramen Bar
Three broths, three separate menu sections: pork tonkotsu, clear chicken, and a vegan base that gets its own tomato bowl. That structure tells you the kitchen is not treating noodles as a side project. The toyo tonkotsu black ramen is the one to order — black pepper oil, garlic chips, fried onion, kikurage and a seasoned egg. Seventh Avenue, Park Slope.

Ramen DANBO Park Slope
Fukuoka-style tonkotsu from a company whose own locations page runs from Vancouver to Wimbledon, and the Brooklyn room at 52 7th Avenue is one of only two it keeps in New York. The broth is made daily in-house with treated water — the brand's own claim, and it tastes cleaner than most tonkotsu around here. Get the Negi-goma Ramen, scallion and sesame piled over that pork base.

Ramen Thukpa
Two noodle-soup traditions share the name here: Japanese ramen and thukpa, the Himalayan one. Vegan bowls sit on the main menu rather than in a corner of it, shoyu included. The Miso Cheese Ramen sounds like a dare and isn't — the cheese melts down into the broth and thickens it. Atlantic Avenue in Boerum Hill, a block off Fourth.

South Slope Ramen
Fifth Avenue, and the menu goes wider than most: shoyu, miso, kimchi, curry and a katsu curry bowl, plus a full cold-noodle section that most shops around here skip. Order the Hiyashi Chuka when it's warm out — chilled noodles, tangy dressing, cut vegetables, nothing steaming at you. Vegetarian versions of the miso and shoyu sit on the same page.
